Blender Muffins
This week iI tried something new. I made muffins in my food processor! I know, I know, blender muffins are not really a new thing, but they are to me! I’m not sure why I hesitated to make them so long, the idea is genius. I am impressed!
And speaking of genius, let’s talk about the time it takes to make these muffins, you’re going to love this! I whipped up these whole food, peanut butter, banana, chocolate chip muffins in literally like 10 minutes and only had to wash my one food processor bowl! These are right up my alley guys!
Even better, the muffins are delicious! The texture of these muffins is soft and moist. They are lightly sweet, which makes them perfect for breakfast or as a snack. And did i mention there’s no refined sugar or garbage ingredients! My family scarfed them right up.
We love anything peanut butter, so I of course, opted for that in the recipe; however, you can use any nut butter of choice. I think I’d like to try almond butter next time. I was also thinking about other things you could add to the recipe, maybe in place of the chocolate chips, walnuts, almond slivers, raisins, dried cranberries, white chocolate chips, and on, and on, and on!
Put these muffins on your to-do list, you’ll be glad you did!

Blender Muffins
ingredients
- 1 cup rolled oats
- 1/4 cup nut butter (I use natural peanut butter)
- 1 ripe banana
- 1 egg
- 1/4 plain greek yogurt
- 2 TBS honey
- 1 tsp vanilla
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp sea salt
- 1/4 cup chocolate chips
INSTRUCTIONS
- Preheat oven to 400 degrees.
- Place all ingredients in blender or food processor, except for the chocolate chips, and process until smooth.
- Fold in chocolate chips.
- Pour batter into lined muffin cups and fill 2/3 full.
- Bake 7-8 minutes, rotating halfway through.
- Cool on wire rack.
